Campari Watermelon Coolers

Yields: 2 drinks
- 10 sinfully sweet campariĀ® tomatoes
- 1½ cup watermelon chunks
- 10 fresh mint leaves
- 1 tbsp. honey
- ½ tsp pink Himalayan salt
- 4 oz. vodka (optional)
- 1 lime, juiced
- 1 cup sparkling water
- Muddle mint, tomatoes, watermelon, salt and honey.
- Add ice, vodka and lime juice. Shake well and strain into ice filled glass.
- Top with sparkling water and garnish.
