honey-jalapeño & mint vinaigrette

Yields: 1 cup Approx. prep time: 15 min
- ½ cup Honey
- 3 Jalapeño, fresh
- ¼ cup Fresh mint, chopped
- 1 Lime, juice and zest
- ¼ cup Apple cider vinegar
- ¼ cup Extra virgin olive oil
- ½ tsp Black pepper
- ¼ tsp Sea salt
- Purée the jalapeños with the honey and vinegar.
- Slowly add the olive oil while the blender/processor is running at low speed.
- Add the mint, just blending enough to incorporate the mint thoroughly.
- Add salt and pepper, to taste.
